Baked Fish With Mushrooms Recipe - Cooking Index
2 1/2 lbs | 1135g / 40oz | Fish - (white), boned |
1/4 cup | 59ml | Olive oil |
1/2 cup | 118ml | Mushrooms - cut in half |
1 | Carrot - diced | |
2 tablespoons | 30ml | Leek - chopped fine |
1 cup | 237ml | White wine |
1/2 cup | 118ml | Fish stock |
Salt and pepper to taste |
Grease a baking pan with olive oil or butter. Wash fish thoroughly, drain, dry, and place in greased pan. Heat the olive oil in a 6-inch pan or skillet and saute the mushrooms, carrot and leek for 5 minutes. Add wine, water and seasoning. Let simmer until the vegetables are tender but still firm.
Remove the vegetables, retaining liquid, and place vegetables on fish. Cover pan with aluminum foil or lid and bake in moderate oven (350F) for 15-20 minutes. Reduce the liquid by half by boiling briskly and pour over fish just before serving.
