Baked Catfish And Pecans Recipe - Cooking Index
2 lbs | 908g / 32oz | Catfish fillets |
1 teaspoon | 5ml | Salt |
1 cup | 62g / 2.2oz | All-purpose flour |
1/4 teaspoon | 1.3ml | Red pepper |
1 teaspoon | 5ml | Lemon rind - grated |
1/2 cup | 99g / 3.5oz | Butter |
1/4 cup | 36g / 1.3oz | Pecans - chopped |
1 tablespoon | 15ml | Lemon juice |
1 tablespoon | 15ml | Worcestershire sauce |
Make pecan sauce by combining 1/4 cup butter, chopped pecans, lemon juice and Worcestershire sauce and blend well. Combine flour, salt, pepper, lemon rind. Roll fillets in mixture, coating well. Melt 1/4 cup butter in large skillet. Brown fillets over medium heat until light brown; turn once to brown both sides.
Place fillets in well-greased 12 X 8 X 2 baking dish. Sprinkle pecan butter sauce over fillets. Sprinkle with additional chopped pecans if desires. Bake uncovered at 350F for 12 minutes or until fish flakes easily when tested with a fork.
