Cranberry-Orange Relish Recipe - Cooking Index
1/2 cup | 99g / 3.5oz | Granulated sugar |
1/4 cup | 40g / 1.4oz | Dark brown sugar - (loosely packed) |
1/4 cup | 82g / 2.9oz | Maple syrup |
3/4 cup | 177ml | Water |
1 tablespoon | 15ml | Ground cinnamon |
1 teaspoon | 5ml | Freshly-grated nutmeg |
1 lb | 454g / 16oz | Fresh or frozen cranberries - cleaned |
4 | Navel oranges - peeled, and | |
Divided into segments | ||
1/2 cup | 73g / 2.6oz | Coarsely-chopped walnut pieces |
Bring the sugars, syrup, water, cinnamon and nutmeg to a boil. Reduce to a simmer and cook gently 5 minutes. Add the cranberries and continue to simmer, uncovered, until half the berries "pop". Remove from the heat and stir in the orange segments. Cool, stir in the walnut pieces and serve.
This recipe yields 5 cups.
