Sweet Potato Pancakes Recipe - Cooking Index
2 | Sweet potatoes - (abt 1 lb) (medium) | |
1 teaspoon | 5ml | Freshly-squeezed lemon juice |
1 | Egg | |
1/4 cup | 15g / 0.5oz | Grated onion |
1 1/2 tablespoons | 22ml | Honey |
1 tablespoon | 15ml | Flour |
1/4 teaspoon | 1.3ml | Ginger |
1/4 teaspoon | 1.3ml | Cinnamon |
1/4 teaspoon | 1.3ml | Salt |
Freshly-ground black pepper - to taste | ||
2 tablespoons | 30ml | Vegetable oil |
Peel the sweet potatoes and coarsely grate them. Place in a bowl, sprinkle with lemon juice and set aside.
In a large bowl, beat the egg lightly. Add the grated onion, honey, flour, ginger, cinnamon, salt and pepper. Add the potatoes and mix well.
In a non-stick skillet, heat the vegetable oil until hot. Using a tablespoon, drop the batter into the pan and flatten each against the bottom of the pan. Fry until golden brown and crisp, about 3 minutes on each side. Drain on a paper-towel lined plate and serve hot.
This recipe yields 6 pancakes for 2 servings.
