Frozen Raspberry Souffle Recipe - Cooking Index
| 2 cups | 474ml | Seedless raspberry puree |
| 2 tablespoons | 30ml | Lemon juice |
| 1 1/2 cups | 355ml | Cream |
| 2 tablespoons | 30ml | Framboise |
| 1 1/2 cups | 297g / 10oz | Sugar |
| 1 cup | 198g / 7oz | Egg whites |
Combine raspberry puree and lemon juice and chill.
Combine cream and framboise, whip until firm but still fluid.
Combine sugar and egg whites in bowl of mixer and heat over simmering water, whisking, until hot. Beat cold on medium speed, being careful not to overbeat. Stir puree into meringue, fold in cream. Mold and freeze.
This recipe yields 1 souffle.
