BLT In Bibb Lettuce Cups Recipe - Cooking Index
2 cups | 125g / 4.4oz | Finely-chopped seeded tomatoes |
1/2 cup | 73g / 2.6oz | Finely-diced smoked mozzarella |
1/4 cup | 10g / 0.4oz | Finely-shredded arugula leaves |
6 | Bacon - cooked until crisp, | |
And then crumbled | ||
1/4 cup | 15g / 0.5oz | Finely-chopped sweet onion |
2 tablespoons | 30ml | Olive oil |
2 teaspoons | 10ml | Balsamic vinegar |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
24 | Outer bibb lettuce leaves (abt 4 heads) - washed, patted dry |
In a bowl, toss together tomatoes, mozzarella, arugula, bacon, onion, olive oil, vinegar, and salt and pepper to taste. Spoon mixture into lettuce leaves and serve immediately.
This recipe yields 24 hors d'oeuvres.
