Broccoli Soup Recipe - Cooking Index
1/2 cup | 31g / 1.1oz | Chopped onion |
1 tablespoon | 15ml | Margarine |
1 tablespoon | 15ml | Flour |
1/2 | Chicken broth - (5 oz) | |
1/2 | Water - (5 oz) | |
10 oz | 284g | Frozen chopped broccoli |
1/2 teaspoon | 2.5ml | Tarragon |
1/4 teaspoon | 1.3ml | Garlic powder |
1/4 teaspoon | 1.3ml | Thyme |
Freshly-ground black pepper - to taste | ||
1 cup | 237ml | Skim milk |
Saute onion in margarine until soft. Add flour and cook for one minute, stirring constantly. Add chicken broth and water gradually and stir until well-blended. Add broccoli and seasonings. Bring to a boil. Reduce heat, cover and cook until broccoli is tender (about 15 minutes). Add milk and simmer another 5 minutes.
This recipe yields 4 servings.
