Tropical Green Slaw Recipe - Cooking Index
2 | Green mangoes or papayas | |
1 | Carrot - coarsely grated | |
1/2 | Red bell pepper - seeded, sliced thin | |
1 | Jalapeno or serrano chile, or to taste - seeded, chopped fine | |
1 | Garlic clove - minced (large) | |
1/4 cup | 59ml | Fresh lime juice |
1/4 cup | 59ml | Pineapple juice |
1 tablespoon | 15ml | Sugar |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
3 tablespoons | 45ml | Roasted peanuts - crushed |
Peel the mangoes and cut the flesh away from the pit. (If using papaya, peel, cut in half and remove the seeds with a spoon.) Using a food processor with the shredding attachment, shred the mango or papaya. Alternatively, the mango or papaya can be finely julienned using a sharp knife. In a large bowl combine the mango, carrot, red bell pepper, chile, and garlic.
In a small bowl combine the lime juice, pineapple juice and sugar and pour over the mango mixture, tossing to combine. Season to taste with salt and pepper. Sprinkle with roasted peanuts.
This recipe yields 4 to 6 servings.
