Chilled Avocado Cucumber Soup Recipe - Cooking Index
| 1/2 | Cucumber (medium) | |
| 1 | Ripe California avocado (small) | |
| 1 | Scallion | |
| 1 | Garlic clove | |
| 2 tablespoons | 30ml | Fresh coriander leaves |
| 2 tablespoons | 30ml | Fresh lemon juice |
| 1/2 cup | 118ml | Plain yogurt |
| 1/2 cup | 118ml | Cold water |
| 1/2 cup | 118ml | Ice cubes |
| 2 | Fresh coriander sprigs - for garnish | |
| Salt - to taste | ||
| Freshly-ground black pepper - to taste |
Peel cucumber and cut into 4 pieces. Quarter avocado, removing pit, and peel. Cut scallion into large pieces. In a blender puree all ingredients until smooth and season with salt and pepper.
Serve soup garnished with coriander.
This recipe yields 2 servings.
