Beet Relish Recipe - Cooking Index
1 tablespoon | 15ml | Beet (medium) |
1 | Granny Smith apple | |
1 | Onion (medium) | |
2 tablespoons | 30ml | Vegetable oil |
1/2 cup | 118ml | Dry red wine |
1 teaspoon | 5ml | Red wine vinegar |
1/2 teaspoon | 2.5ml | Honey |
Peel beet, apple, and onion and cut into 1/4-inch dice. In a heavy saucepan heat oil over moderately-high heat until hot but not smoking and saute beet, apple, and onion until onion is softened, about 5 minutes. Stir in wine, vinegar, and honey and simmer relish, covered, stirring occasionally, 20 minutes.
Transfer relish to a heatproof bowl and cool. Chill relish, covered, at least 4 hours and up to 1 week.
This recipe yields 1 1/2 cups.
