Carrot Slaw Recipe - Cooking Index
1 tablespoon | 15ml | Lemon juice |
1/2 tablespoon | 7.5ml | White wine vinegar |
1/2 tablespoon | 7.5ml | Honey |
1/2 tablespoon | 7.5ml | Dijon mustard |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
3 tablespoons | 45ml | Olive oil |
2 cups | 220g / 7.8oz | Shredded carrots |
Optional | ||
1 teaspoon | 5ml | Poppy seeds - or |
1/2 cup | 73g / 2.6oz | Chopped roasted peanuts |
In a bowl, whisk together the lemon juice, vinegar, honey, mustard, and salt and pepper. Whisk in the oil to combine and toss with the carrots to coat. Stir in one of the optional flavorings if desired.
This recipe yields 4 servings.
