Black Bean Salad Recipe - Cooking Index
3 tablespoons | 45ml | Fresh lime juice |
2 tablespoons | 30ml | Olive oil |
1 | Black beans - (15 oz) - rinsed, drained | |
1 | Mango - peeled, chopped | |
1 | Ripe avocado - peeled, chopped | |
1/2 | Red onion - diced | |
Tabasco sauce - to taste | ||
2 tablespoons | 30ml | Minced fresh parsley |
1 cup | 237ml | Shredded Romaine lettuce |
In a bowl, whisk together lime juice, oil, and salt to taste. Stir in remaining ingredients, except lettuce, and season with salt and pepper to taste. Let salad stand, stirring once or twice, 15 minutes for flavors to develop. Serve salad on top of lettuce.
This recipe yields 2 servings.
