Marinated Mushrooms Recipe - Cooking Index
1/4 cup | 59ml | Extra-virgin olive oil |
3 tablespoons | 45ml | Fresh lemon juice |
1 | Fresh thyme sprig | |
1/4 teaspoon | 1.3ml | Fennel seeds |
1/2 teaspoon | 2.5ml | Crushed coriander seeds |
1 | Garlic clove - thinly sliced | |
1/4 cup | 27g / 1oz | Minced celery |
2 teaspoons | 10ml | Black peppercorns |
1 | Bay leaf | |
1/4 cup | 59ml | Water |
1 lb | 454g / 16oz | Small button mushrooms - trimmed, |
Or regular-size mushrooms, quartered | ||
1/2 | Lemon | |
1 tablespoon | 15ml | Finely-chopped flat leaf parsley |
Combine all ingredients except mushrooms, lemon and parsley in a saucepan and bring to a boil, cover, and simmer for 5 minutes. Add the mushrooms to mixture in saucepan and simmer another 5 minutes.
With a slotted spoon remove mushrooms to a bowl. Boil the cooking liquid until reduced and thickened. Pour sauce over mushrooms and chill.
For service, sprinkle with parsley.
This recipe yields 6 servings.
