Blueberry Crumb Cake Squares

1/2 lb 227g / 8ozUnsalted butter - (2 sticks) - softened
1 1/2 cups 297g / 10ozGranulated sugar
3   Eggs - plus
3   Egg yolks
2 teaspoons 10mlVanilla extract
1/4 cup 59mlMilk or buttermilk
2 1/2 cups 156g / 5.5ozBleached all-purpose flour
2 teaspoons 10mlBaking powder
1   Blueberries - rinsed, picked over,
  And dried
  For The Crumb Topping
2 cups 125g / 4.4ozBleached all-purpose flour
1/3 cup 65g / 2.3ozGranulated sugar
1/3 cup 53g / 1.9ozBrown sugar
1/2 teaspoon 2.5mlGround cinnamon
1/4 teaspoon 1.3mlGrated nutmeg
12 tablespoons 180mlUnsalted butter - (1 1/2 sticks) - melted
1   Jelly-roll pan, 10" by 15" - buttered

Recipe Instructions

Set a rack at the middle level of the oven and preheat to 350 degrees.

For the cake batter, in a large mixing bowl, beat the butter and sugar until they're soft and light. Add the 3 eggs one at a time, beating well after each addition. Beat in the vanilla. In another bowl, stir the yolks into the milk. Sift together the flour and baking powder and stir into the batter in 3 additions, alternating with the yolks and milk, beginning and ending with the flour. Spread the batter in the prepared pan.

Scatter the blueberries evenly over the batter, and press them in gently.

To make the crumbs, mix the dry ingredients in a bowl. Stir in the melted butter. Rub the mixture to coarse crumbs by hand. Scatter the crumbs over the berries as evenly as possible.

Bake the cake for 50 to 60 minutes, until the batter is firm and the crumbs are well-colored.

Cool the cake in the pan on a rack. Cut the cooled cake into fifteen 3-inch squares. Remove the squares from the pan to a platter.

Serve the cake squares as a casual dessert -- they're great for a picnic. Store loosely covered at room temperature.

This recipe yields 15 three-inch squares.
