Taro Root And Garlic Chive Latka Recipe - Cooking Index
1 lb | 454g / 16oz | Taro root |
2 tablespoons | 30ml | Chopped garlic chives |
1 tablespoon | 15ml | Chopped ginger |
1 | Egg white | |
1 tablespoon | 15ml | Cornstarch |
2 tablespoons | 30ml | Olive oil |
2 tablespoons | 30ml | Salmon roe |
1 tablespoon | 15ml | Sour cream |
16 | Chive points - for garnish | |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Peel taro root and grate over large holes of cheese grater. In a mixing bowl place shredded taro root, garlic chives, ginger, egg white and cornstarch. Mix and season to taste with salt and pepper. In a large skillet over medium heat, heat the olive oil and sear 1 tablespoon of taro mix, flatten as a pancake. Cook each side until golden brown.
Drain excess oil on a paper towel. Serve topped with salmon roe, sour cream and chive points.
This recipe yields 4 servings.
