Gingered Sweet Potato Puree Recipe - Cooking Index
2 | Sweet potatoes - (abt 3/4 lb total) (medium) | |
3 tablespoons | 45ml | Milk |
1 tablespoon | 15ml | Unsalted butter |
3/4 teaspoon | 3.8ml | Grated peeled fresh gingerroot |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Peel potatoes and cut into 1-inch pieces. In a small saucepan boil potatoes in salted water to cover 15 minutes, or until very tender, and drain well in a colander.
In a food processor puree hot potatoes with milk, butter, and gingerroot until smooth and season with salt and pepper.
This recipe yields 2 servings.
