Duxelles Recipe - Cooking Index
1 1/2 tablespoons | 22ml | Unsalted butter |
1 tablespoon | 15ml | Very finely chopped shallot |
1 lb | 454g / 16oz | Finely-chopped whole cultivated mushrooms |
Or just the stems | ||
Salt - to taste | ||
Freshly ground black pepper - to taste |
In a skillet melt the butter over moderate heat and cook the shallot for about 30 seconds. Add the chopped mushrooms, salt and pepper and cook until the liquid rendered from the mushrooms evaporates, about 10 minutes.
This recipe yields about 1 cup duxelles.
