Dressing | ||
3 tablespoons | 45ml | Red wine vinegar |
1 tablespoon | 15ml | Dijon mustard |
1 teaspoon | 5ml | Anchovy paste |
1/2 teaspoon | 2.5ml | Dried thyme - crumbled |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1/3 cup | 78ml | Olive oil |
Salad | ||
1 cup | 160g / 5.6oz | Green beans - trimmed, and |
Cut 2" lengths, blanched | ||
2 | Red potatoes - boiled, sliced (small) | |
1/2 | Boston lettuce head - leaves washed | |
And dried | ||
3 | Cherry tomatoes - halved | |
6 oz | 170g | Tuna - seared |
Garnish | ||
Nicoise olives | ||
Capers |
In a bowl, whisk together vinegar, mustard, anchovy paste, thyme, salt and pepper to taste. Add the oil in a stream, whisking, and whisk until the dressing is emulsified.
In a bowl, toss the beans and potatoes with enough dressing to lightly coat. On a plate, arrange the lettuce, tomatoes, beans and potatoes, and tuna. Drizzle with more dressing and garnish with optional olives and capers.
