Recipe Ingredients

  Dressing
3 tablespoons 45mlRed wine vinegar
1 tablespoon 15mlDijon mustard
1 teaspoon 5mlAnchovy paste
1/2 teaspoon 2.5mlDried thyme - crumbled
  Salt - to taste
  Freshly-ground black pepper - to taste
1/3 cup 78mlOlive oil
  Salad
1 cup 160g / 5.6ozGreen beans - trimmed, and
  Cut 2" lengths, blanched
2   Red potatoes - boiled, sliced (small)
1/2   Boston lettuce head - leaves washed
  And dried
3   Cherry tomatoes - halved
6 oz 170gTuna - seared
  Garnish
  Nicoise olives
  Capers

Recipe Instructions

In a bowl, whisk together vinegar, mustard, anchovy paste, thyme, salt and pepper to taste. Add the oil in a stream, whisking, and whisk until the dressing is emulsified.

In a bowl, toss the beans and potatoes with enough dressing to lightly coat. On a plate, arrange the lettuce, tomatoes, beans and potatoes, and tuna. Drizzle with more dressing and garnish with optional olives and capers.
