Minted Pea Sauce Recipe - Cooking Index
1 1/2 cups | 355ml | Chicken broth |
2 1/4 cups | 533ml | Frozen peas - (abt a 10 oz pkg) |
3/4 cup | 30g / 1.1oz | Fresh mint leaves - (packed) |
2 tablespoons | 30ml | Unsalted butter |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
In a 3-quart saucepan bring broth to a boil. Add 2 cups peas, mint, and butter, to broth and simmer, uncovered, 5 minutes or until peas are tender. In a blender pure mixture until smooth (use caution when blending hot liquids) and pour through fine sieve into cleaned pan. Add remaining 1/4 cup peas and simmer until peas are just tender, about 2 minutes. Season sauce with salt and pepper.
This recipe yields 2 1/2 cups.
