1 packet | Pitted prunes - (12 oz) | |
1 packet | Vacuum-packed sweet potatoes - (17 oz) | |
1 packet | Frozen sliced carrots - (10 oz) | |
1/4 cup | 40g / 1.4oz | Raisins |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1 | Frozen orange juice concentrate - (6 oz) - thawed | |
1 1/2 teaspoons | 7.5ml | Ground ginger |
Preheat oven to 325 degrees.
Place prunes, sweet potatoes, carrots, and raisins in a 2 1/2-quart baking dish. Sprinkle with salt and pepper.
In a bowl, mix orange juice, 3/4 cup water, and ginger. Pour over prune mixture. Stir once or twice to combine.
Bake uncovered in preheated oven for 1 hour, stirring after 30 minutes. Add a little more juice and cover loosely with foil if dish becomes too dry. Serve hot.
