Almost Instant Tzimmes

Recipe Ingredients

1 packet  Pitted prunes - (12 oz)
1 packet  Vacuum-packed sweet potatoes - (17 oz)
1 packet  Frozen sliced carrots - (10 oz)
1/4 cup 40g / 1.4ozRaisins
1/2 teaspoon 2.5mlSalt
1/4 teaspoon 1.3mlFreshly-ground black pepper
1   Frozen orange juice concentrate - (6 oz) - thawed
1 1/2 teaspoons 7.5mlGround ginger

Recipe Instructions

Preheat oven to 325 degrees.

Place prunes, sweet potatoes, carrots, and raisins in a 2 1/2-quart baking dish. Sprinkle with salt and pepper.

In a bowl, mix orange juice, 3/4 cup water, and ginger. Pour over prune mixture. Stir once or twice to combine.

Bake uncovered in preheated oven for 1 hour, stirring after 30 minutes. Add a little more juice and cover loosely with foil if dish becomes too dry. Serve hot.
