16 Bean Soup

Recipe Ingredients

2 cups 320g / 11ozMixed dried beans (1 pkg).
2 cups 292g / 10ozDiced ham (other options are smoked sausage, ham bone, or ham hock)
1   Large chopped onion
1 oz 28g28 oz. Can chopped tomatoes
1/2 cup 55g / 1.9ozSliced carrots
1/2 cup 55g / 1.9ozSliced celery
2   Quarts Water
1   Tsp chili powder
-   Salt and pepper to taste

Recipe Instructions

Rinse the dried beans and soak in salted water overnight. To cook, rinse the beans and place in a covered kettle with the meat product and simmer 2 1/2 to 3 hours. Add the onion, tomatoes, carrots, celery, and chili powder and simmer for another 45 minutes. Add salt and pepper to taste.
