Coleslaw With Boiled Dressing

Recipe Ingredients

1   Egg yolk (large)
1/4 cup 59mlCider vinegar
1/2 teaspoon 2.5mlEnglish-style dry mustard
  Salt - to taste
  Cayenne pepper - to taste
2 tablespoons 30mlSugar
1 tablespoon 15mlAll-purpose flour
1/4 cup 59mlWater
2 tablespoons 30mlHeavy cream
6 cups 1422mlFinely-shredded cabbage
1/2 cup 55g / 1.9ozGrated carrot
1/2 cup 73g / 2.6ozChopped scallions
1 tablespoon 15mlChopped fresh parsley, tarragon and/or
  Dill

Recipe Instructions

In a saucepan over moderate heat whisk together the yolk, the vinegar, the mustard, the salt, the cayenne, the sugar, the flour, and 1/4 cup water. Bring the mixture to a simmer, whisking, for 6 to 8 minutes, or until smooth and thick. Stir in the cream and adjust seasoning. In a large bowl stir together the cabbage, the carrot, the scallions, and the herbs, pour the dressing over the cabbage mixture, and combine the mixture well. Allow coleslaw to sit for at least 30 minutes before serving.

This recipe yields 4 to 6 servings.
