Cornmeal Cheddar Fritters Recipe - Cooking Index
| 1 cup | 62g / 2.2oz | Cornmeal |
| 1 cup | 237ml | Grated sharp Cheddar |
| 1/2 cup | 31g / 1.1oz | Grated onion |
| 1/4 cup | 23g / 0.8oz | Minced red bell pepper |
| 1 teaspoon | 5ml | Salt |
| Cayenne pepper - to taste | ||
| 3/4 cup | 177ml | Boiling water |
| Vegetable oil - for frying | ||
| Louisiana-style hot sauce, | ||
| For example Crystal brand |
In a bowl combine cornmeal, Cheddar, onion, bell pepper, salt, and cayenne. Stir in boiling water and mix thoroughly.
In a deep heavy pan or deep fryer heat 3 inches of vegetable oil to 350 degrees. Drop 6 spoonfuls of the batter into the oil and fry for 2 to 3 minutes or until golden brown.
Transfer fritters to paper towels to drain. Season with additional salt if desired. Serve warm with hot sauce.
This recipe yields about 2 dozen fritters.
