Meat Curry Powder

Recipe Ingredients

2 1/4 cups 247g / 8.7ozCoriander seeds
1/2 cup 55g / 1.9ozFennel seeds
1/2 cup 55g / 1.9ozCumin seeds
3 1/2 teaspoons 17mlBlack peppercorns
1/2 cup 118mlDried whole red chiles - (such
1   Cinnamon stick - 7-inch
10   Cardamom pods
10   Whole cloves
5 teaspoons 25mlTurmeric powder

Recipe Instructions

In a dry pan, gently fry, one at a time, the coriander, fennel, cumin, peppercorns, and the whole chiles. Fry the chiles until they are dark brow and crispy. Cool and break the chiles into pieces. Place the chiles, along with the seeds, in a spice or coffee grinder and process to a fine powder. mix well.

Store the powder in airtight containers when it is completely cool.
