16 oz | 454g | Dried black-eyed peas |
1 | Smoked pork fatback | |
2 tablespoons | 30ml | Black pepper |
2 tablespoons | 30ml | Garlic powder |
2 tablespoons | 30ml | Dried chopped onion flakes |
1 tablespoon | 15ml | Worcestershire sauce |
1 tablespoon | 15ml | Nuoc nam |
Water to cover |
This is a simple recipe for black-eyed peas.
Just put the black-eyed peas in a pot, cover with water, and add other ingredients. If you don't have nuoc nam (Vietnamese fish sauce), substitute 1 teaspoon salt.
Bring to a boil, reduce heat, and simmer until peas are soft, about 45 minutes or so. Add water as necessary. Remove fatback from peas before serving.
