1 tablespoon | 15ml | Ground allspice |
1 tablespoon | 15ml | Dried thyme |
1 1/2 teaspoons | 7.5ml | Cayenne |
1 1/2 teaspoons | 7.5ml | Fresh ground black pepper |
1 1/2 teaspoons | 7.5ml | Ground sage |
3/4 teaspoon | 3.8ml | Ground nutmeg |
3/4 teaspoon | 3.8ml | Ground cinnamon |
2 tablespoons | 30ml | Garlic powder |
2 tablespoons | 30ml | Salt |
1 tablespoon | 15ml | Sugar |
1/4 cup | 59ml | Olive oil |
1/4 cup | 59ml | Soy sauce |
3/4 cup | 177ml | White vinegar |
1/2 cup | 118ml | Orange juice |
One lime - juice of | ||
1 | Scotch bonnet pepper - seeded, finely chopped | |
1 cup | 62g / 2.2oz | White onions - chopped |
3 | Green onions - finely chopped | |
4 | Chicken breasts |
Mix it all in a glass bowl, not metal or wood, marinate the chicken for at least one hour, longer if possible.
Grill for about 6 min to a side and baste with the marinade.
