1 tablespoon | 15ml | Coriander seeds |
1 1/2 tablespoons | 22ml | Cumin seeds |
1 tablespoon | 15ml | Cardamom seeds |
2 | Cinnamon | |
3 | Bay leaves | |
1 1/2 tablespoons | 22ml | Peppercorns |
1/2 tablespoon | 7.5ml | Whole cloves |
1 tablespoon | 15ml | Ground mace |
1. Place all the seeds together in a saute pan over medium heat and dry-roast, shaking pan often, until they give. off an aroma, about 5 minutes.
2. Combine all ingredients in a mortar or a clean coffee grinder and grind to a powder. Store in an airtight container.
