Garam Masala - 08 Recipe - Cooking Index
| 100 | Coriander seeds | |
| 50 | Cumin seeds | |
| 25 | Black or green peppercorns | |
| 25 | Cinnamon sticks | |
| 25 | Cloves | |
| 25 | Green cardamom seeds | |
| 25 | Black cardamom seeds | |
| 5 | Curry leaves - (to 6) | |
| 2 teaspoons | 10ml | Fennel seeds | 
| 10 | Nutmeg | 
Preheat oven to 100 C. Mix all ingredients except nutmeg in a frying pan. Roast them in the oven. Do not let them turn brown. Put aside until cool. Blend cooled and roasted spices at high speed for 2-3 minutes until completely pulverized. Add nutmeg and mix well.
Makes approx. 1 1/2 cups
