Black Bean Dip

Recipe Ingredients

1 1/2 cups 240g / 8.5ozBlack beans - cooked
1/3 cup 36g / 1.3ozCarrot - minced
1/3 cup 36g / 1.3ozCelery - minced
1 tablespoon 15mlGarlic - minced
1 teaspoon 5mlOregano - dried
1/2 teaspoon 2.5mlCoriander - ground
1 teaspoon 5mlCumin - ground
1/4 teaspoon 1.3mlSalt
1/2 cup 118mlSour cream
1 tablespoon 15mlFresh cilantro; chopped - or
1 teaspoon 5mlDried cilantro; crushed - *
  Garnish
  Fresh cilantro - or
  Parsley - chopped

Recipe Instructions

* Use either the fresh leaves or the dried leaves for this recipe.

Coarsely mash half the beans by hand. Add the remaining whole beans and all of the other ingredients, blending well. Cover and chill. Garnish with cilantro or parsley.

Makes about 2 3/4 cups of dip.

SUGGESTED DIPPERS: Bok Choy, Tortilla Chips, Corn Bread Croutons
