Baharat (North African Spice) Recipe - Cooking Index
1/2 | Nutmeg - grated | |
1 tablespoon | 15ml | Black peppercorns |
1 tablespoon | 15ml | Coriander seeds |
1 tablespoon | 15ml | Cumin seeds |
1 tablespoon | 15ml | Cloves |
1 pinch | Cinnamon | |
Seeds from 6 green cardamoms | ||
2 tablespoons | 30ml | Paprika |
1 teaspoon | 5ml | Ground chili |
A fiery preparation from the Gulf States, used to spice meats and vegetables. Grind all the ingredients together. The mixture will keep for 3-4 months stored in an airtight jar.
