1 | And frozen for - 45 minutes | |
1 cup | 62g / 2.2oz | Onions - peeled and diced |
1 cup | 110g / 3.9oz | Carrot - peeled and sliced (large) |
1/4 cup | 36g / 1.3oz | Bread crumbs - plain |
4 | Egg whites | |
1/4 teaspoon | 1.3ml | Salt |
1/4 teaspoon | 1.3ml | Cayenne pepper |
1 teaspoon | 5ml | Paprika |
1/2 teaspoon | 2.5ml | Thyme |
Filling | ||
10 1/2 oz | 298g | Spinach - frozen chopped, cooked and drained |
2 | Egg whites | |
2 tablespoons | 30ml | Parmesan - grated |
1/4 teaspoon | 1.3ml | Salt |
1/4 teaspoon | 1.3ml | Pepper - black |
Pam vegetable oil spray |
Place the turkey, onions and carrot in the bowl of a food processor fitted with the steel blade and puree. Combine with the remaining meat ingredients in a bowl. Mix well.
Combine the filling ingredients (but not the vegetable spray) and mix well.
Spray a baking sheet with vegetable oil spray. Place half the meat on the sheet and form a rectangle 8 x 4". Make a long mound in the center with the spinach and then cover with the remaining meat, smooth the edges. Bake for 1 hour in a preheated 375 degree oven and then serve hot, warm or chilled.
