Turkey Frittata Recipe - Cooking Index
1/2 cup | 31g / 1.1oz | Onion - sliced |
1 | Garlic clove - minced | |
1 tablespoon | 15ml | Oil |
1 cup | 237ml | Mushrooms - sliced |
1 cup | 146g / 5.1oz | Frozen spinach - dry chopped |
2 tablespoons | 30ml | Lemon juice |
1/8 teaspoon | 0.6ml | Ground black pepper |
1 cup | 146g / 5.1oz | Turkey - chopped |
6 | Eggs - beaten |
Defrost and squeeze spinach dry. Saute the onion, garlic and mushrooms in the oil for 5 minutes. Add the spinach, lemon juice and pepper. Cook over low heat for 3 min.
Add the turkey and eggs to the spinach mixture. Pour into a greased 9 inch round baking dish. Bake in 350 F oven for 25 to 30 minutes or until eggs are set. Cut into wedges to serve.
