Beer Battered Nuggets

  Raw shrimp - shelled and deveined
  Boned and skinned chicken breast halves - cut into nugget size
  Boned and skinned chicken or turkey - cut into nugget thighs size
1   Peeled potatoes or sweet potatoes - cut 3/16" slices (large)
  Mushroom caps
  Bermuda onion cut and separated into rings
  Cauliflower flowerets
  Broccoli florets
  Beer Batter For Nuggets
1 lb 454g / 16ozNuggets
1 teaspoon 5mlBaking powder
1   Egg - beaten
1 cup 62g / 2.2ozAll-purpose flour
1/2 teaspoon 2.5mlSalt
1/2 cup 118mlBeer -sweet and sour sauce for
  Shrimp or chicken nuggets---
1 tablespoon 15mlCornstarch
1 tablespoon 15mlSugar
1/2 cup 118mlPineapple juice
1 teaspoon 5mlSalt
4 tablespoons 60mlVinegar
1 cup 237mlPineapple chunks - drained

Recipe Instructions

A nugget is a bite-size morsel from the list of optional nugget ingredients. You can use one ingredient alone or in combination with other ingredients. One pound of nuggets will yield 4 to 6 servings.

Preheat canola or equivalent cooking oil in a deep fryer. Add a few drops of sesame oil if you wish for flavor. Use a good thermometer and bring the oil to 370F.

For beer battering nuggets: Sift flour, baking powder and salt into a bowl. Beat in egg and beer. Dip nuggets in batter, coating them well. Fry the nuggets in cooking oil until browned. Drain on paper towels and keep warm.

To make Sweet-and-Sour Pineapple Sauce: Mix the cornstarch, sugar and salt with the vinegar. Add pineapple juice. Cook over low heat, stirring constantly, until thickened. Arrange the batter fried nuggets and pineapple chunks on a serving platter and pour sauce over all.
