1/8 teaspoon | 0.6ml | Thread saffron - crushed |
1 tablespoon | 15ml | Cooking oil |
3 lbs | 1362g / 48oz | Broiler chicken - cut up |
16 oz | 454g | Canned tomatoes - cut up |

1/2 cup | 118ml | Parsley - snipped |
1/2 cup | 118ml | Olive with pimento |
1 teaspoon | 5ml | Salt |
In a large skillet cook onions , garlic , coriander , paprika ,cumin , ginger , saffron , and salt in hot cooking oil until onion is tender but not brown. stir in chicken and undrained tomatoes.
Transfer mixture to a 3 quart casserole. cover; bake in a 375 oven 1.25 to hours or until chicken is tender. skim off fat quarter lemon length wise and seed. stir lemon parsley and olives into casserole: heat through.
