Spicy Hot Caribbean Chicken Marinade Recipe - Cooking Index

2 | Jalapenos - (seeded) | |
1/3 cup | 78ml | Lemon juice |
1/4 cup | 59ml | Honey |
2 tablespoons | 30ml | Veg oil |
2 tablespoons | 30ml | Fresh thyme leaves or |
2 teaspoons | 10ml | Dried thyme leaves |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Ground allspice |
1/4 teaspoon | 1.3ml | Nutmeg |
6 | Boneless - skinless chicken |
Place all ingredients except chicken in food processor or blender and blend until smooth.
Pour over chicken and marinade for 2-6 hours. No longer than 6 hours.
Grill chicken and brush with marinade.
Note: I used serranos chilies instead of jalapenos.
