2 tablespoons | 30ml | Olive oil - divided |

Pepper - to taste | ||
1/2 cup | 118ml | Fresh lime juice |
1 cup | 62g / 2.2oz | Red onion (small) |
1/4 cup | 4g / 0.1oz | Fresh cilantro |
1/2 | Jalapeno pepper - seeded | |
2 cups | 474ml | Cantaloupe - dried, ripe |
1 cup | 237ml | Avocado - peeled/seeded/dic (large) |
1 cup | 146g / 5.1oz | Apple - peeled and diced |
1 | Romaine lettuce |
Brush chicken with 1 tablespoon oil and sprinkle lightly with salt and pepper. Grill or broil 6-8 inches from heat source for 2-3 minutes per side until cooked through. Dice and reserve. In a food processor combine lime juice, onion, cilantro, and jalapeno. Process until finely chopped.
Gradually add oil with machine running. Season to taste with salt and pepper. In a salad bowl toss chicken, melon, avocado and jicama with dressing. Serve on a bed of Romaine lettuce leaves.
