Smoked Turkey Salad

Recipe Ingredients

1 1/2 lbs 681g / 24ozSmoked turkey - skinned and
  Into 2-inch julienne
1 1/2 cups 355mlSherry mayonnaise
  Salt and pepper
  Pepper
3/4 lb 340g / 11ozJarlsberg cheese - julienne
2 cups 474mlGrapes - seedless, red or green
1 cup 110g / 3.9ozCelery - chopped
  To taste
1 tablespoon 15mlGreen peppercorns - water-
  Drained

Recipe Instructions

1. Combine turkey, Jarlsberg, grapes and celery in a mixing bowl.

2. Add the Sherry Mayonnaise and toss gently but well. Season to taste with salt and pepper and toss again. Cover and refrigerate until serving time.

3. Arrange the salad in serving portions and sprinkle with green peppercorns to taste. Cooked, lightly smoked ham or chicken may be substituted for turkey.
