Shredded Chicken Sesame Recipe - Cooking Index
This dish can be served as a salad course with a garnish of lettuce or served on crackers as an appetizer. Be careful or your guests will fill up on this dish before the main courses are served.

Sesame Garlic Dressing | ||
1 teaspoon | 5ml | Sugar |
1/2 teaspoon | 2.5ml | Msg - optional |
2 tablespoons | 30ml | Light soy sauce |
2 1/2 tablespoons | 37ml | Sesame paste - see * note |
1 tablespoon | 15ml | Sesame oil |
1 tablespoon | 15ml | Chinese red vinegar |
(or cider vinegar) | ||
1 tablespoon | 15ml | Chopped green onion |
1/2 teaspoon | 2.5ml | Grated fresh ginger |
2 | Garlic cloves - crushed | |
1/4 tablespoon | 3.8ml | Chinese hot pepper oil - or to taste |
* Note: Available in Chinese or Oriental markets.
One chicken, about 2 3/4 to 3 pounds, lightly boiled, skin removed and discarded, boned and shredded. Use the bones and skin for a later soup stock. Place the shredded chicken in a bowl. Mix the remaining ingredients together to form a salad dressing. Toss with the chicken and arrange on a platter. Garnish with more chopped green onion, if desired. This recipe serves 6 to 8.
