Basil Tomato Salad Recipe - Cooking Index
2 tablespoons | 30ml | Olive oil |
2 tablespoons | 30ml | Cider vinegar |
2 teaspoons | 10ml | Basil - chopped -=or=- |
1 teaspoon | 5ml | Dried basil |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
3 cups | 480g / 16oz | Cooked rice - cooled |
2 cups | 125g / 4.4oz | Tomatoes - chopped (medium) |
1 cup | 146g / 5.1oz | Cucumber - seeded and chopped (medium) |
1 cup | 62g / 2.2oz | Red onion - chopped (small) |
In a small bowl, whisk together oil, vinegar, basil, salt and pepper.
Add rice, tomatoes, cucumber and onion; toss. Serve chilled.
