Roast Chicken Stuffing (American Style)2

Recipe Ingredients

1/2 lb 227g / 8ozChestnuts - peeled
1/2 cup 118mlChicken stock
1/2 cup 118mlBrandy
3   Shallots - chopped
2 tablespoons 30mlButter
1/2 lb 227g / 8ozSausage meat
1/2 teaspoon 2.5mlDried thyme
1/2 teaspoon 2.5mlSage
2 tablespoons 30mlFresh parsley - chopped
1/4 teaspoon 1.3mlDried marjoram
3 cups 711mlDried bread - cubed

Recipe Instructions

Place chestnuts in a saucepan with chicken stock and brandy. Bring to a boil and simmer 30-40 minutes.

Saute shallots in butter. Add sausage meat and cook 5 minutes, stirring with a fork to separate sausage crumbs.

Coarsely chop half the chestnuts and grind the other half. Combine all ingredients and mix well, adding more stock or brandy to moisten the stuffing.
