Preheat oven to 350 degrees.
Rub chicken with goose fat, salt and pepper.
Place chicken, breast side down on a rack in a roasting pan. Roast 30 minutes, turn over and roast for an additional 20 to 30 minutes, basting occasionally, or until the juices run clear.
