  Nonstick cooking spray
1 cup 62g / 2.2ozChopped onion
1   Garlic - minced
14 1/2 oz 411gChicken broth
7 1/2 oz 213gTomatoes - canned, cut up
1/4 teaspoon 1.3mlDried thyme - crushed
1/4 teaspoon 1.3mlSaffron
1/4 teaspoon 1.3mlGround red pepper
1 cup 160g / 5.6ozLong-grain rice
1 cup 237mlSweet red pepper - or green (medium)
1/2 lb 227g / 8ozMedium shrimp - peeled and de
1 cup 237mlFrozen peas

Recipe Instructions

Recipe by: New Dieter's Cookbook Preparation Time: 0:55 Rinse chicken; pat dry. Spray a Dutch oven with nonstick cooking spray ground red pepper. Bring to boiling; reduce heat.

Cover and simmer for 15 minutes. Stir in rice, and cover. Simmer for 15 minutes more or until rice nearly tender. Meanwhile, cut green or sweet red pepper into strips.

Stir rice with the shrimp and peas. Cover and simmer for 10 minutes more or until rice and chicken are tender, and shrimp turns pink.
