Baked Clam Loaf Recipe - Cooking Index
1/4 lb | 113g / 4oz | Butter |
1/4 cup | 59ml | Olive oil |
1 cup | 62g / 2.2oz | Chopped onion |
1 1/2 teaspoons | 7.5ml | Chopped fresh parsley |
1 1/2 teaspoons | 7.5ml | Oregano |
1 splash | Tabasco sauce | |
1 tablespoon | 15ml | Fresh lemon juice |
3 | Garlic cloves - minced | |
1/8 teaspoon | 0.6ml | Pepper |
3 | Minced clams | |
2 cups | 292g / 10oz | Seasoned bread crumbs |
1 cup | 146g / 5.1oz | Grated parmesan cheese |
Saute onions and garlic in butter and oil until soft but not brown. Add all the seasonings and mix well. Add clams and mix. Add bread crumbs and mix well.
Pack into 2 small mini loaf pans. Sprinkle liberally with Parmesan cheese. Bake uncovered at 350F for 20 minutes. Unmold onto serving plate and serve warm. Spread on crackers. This freezes well.
