Orzo And Smoked Turkey Salad Recipe - Cooking Index
1 cup | 237ml | Orzo pasta |
6 oz | 170g | Smoked turkey breast - cut ¥ |
1/4 | Cubes | |
1/2 cup | 31g / 1.1oz | Green onions - thinly |
Sliced | ||
1/4 cup | 59ml | Red cabbage - finely |
Shredded | ||
1/4 cup | 4g / 0.1oz | Fresh cilantro - chopped and |
Loosely packed | ||
3 tablespoons | 45ml | Lemon juice |
2 tablespoons | 30ml | Regular or low fat |
Mayonnaise | ||
2 teaspoons | 10ml | Olive oil |
Cook the orzo according to the package directions, but without adding the salt. Drain, then rinse with cold water and drain again.
In a large bowl, combine the orzo, turkey, onions, cabbage and cilantro. In a small bowl, stir together the lemon juice, mayonnaise and oil. Add to the orzo mixture and toss until well coated.
