3 tablespoons | 45ml | Mango chutney - chopped |
1/2 teaspoon | 2.5ml | Curry powder - up to 1 |
4 | Bays English muffins - split, lightly toasted | |
Baby lettuce leaves | ||
1/2 lb | 227g / 8oz | Sliced cooked turkey |
8 | Tomato - halved | |
8 | English cucumber - halved |
Combine cream cheese, chutney and curry powder; spread on toasted muffins. Top with lettuce. Alternate slices of turkey, tomato and cucumber; garnish with a dollop of spread and cucumber.
Notes: Cream cheese punctuated with the mild heat of mango chutney and curry powder makes an intriguing partner for leftover turkey breast and cool tomato and cucumber slices. Serve these open-face sandwiches as a light end-of- Thanksgiving Day supper.
