Almond Fruit Salad

Recipe Ingredients

2 cups 320g / 11ozCooked white or brown rice, cooled to room temperature
1   Orange, peeled, quartered, and sliced
1/2 cup 15g / 0.5ozSeedless red grapes, halved
1   Medium kiwi fruit, pared, quartered and sliced
1/3 cup 30g / 1.1ozSlivered almonds, toasted
2 tablespoons 30mlOrange juice
1 tablespoon 15mlSoy sauce
2 teaspoons 10mlVegetable oil
1/4 teaspoon 1.3mlMinced fresh ginger

Recipe Instructions

Combine rice, orange, grapes, kiwi fruit, and almonds in large bowl.  Blend orange juice, soy sauce, oil and ginger in small bowl; pour over rice mixture.  Toss lightly.

Hints

Alternate preparation: Prepared poppy seed dressing may be substituted for dressing.
