1 tablespoon | 15ml | Soy sauce |
1/8 teaspoon | 0.6ml | Crushed red pepper |
Preheat the oven to 375 degrees. Place the chicken leg quarters in a large baking pan that has been coated with nonstick vegetable spray; sprinkle the chicken with the salt and black pepper, then drizzle with the melted butter. Bake for 45-50 minutes, or until the chicken is golden and cooked through.
In a small saucepan, combine the remaining ingredients to make a raspberry sauce; mix well. Cook over low heat for about 1 minute, until the sauce is smooth, stirring occasionally. Remove the chicken from the pan and place on a serving platter.
Top with the sauce and serve.
