Baby Potatoes Coated With Almonds Recipe - Cooking Index
3 lbs | 1362g / 48oz | Baby new potatoes |
2 tablespoons | 30ml | Almond oil |
2 | Jalapeno peppers - seeded and minced | |
2 tablespoons | 30ml | Grated ginger |
1/2 cup | 46g / 1.6oz | Powdered almonds* |
2 tablespoons | 30ml | Cilantro - minced |
Salt and pepper | ||

Steam potatoes until just tender, about 15 minutes. Set them aside. Combine oil, peppers, ginger, almonds and cilantro in a large bowl. Add potatoes and toss until well coated. Season with salt and pepper and sprinkle with lemon juice. Spear potatoes with cocktail sticks; arrange on a platter. Serve hot, or keep warm in a 250F oven for up to 30 minutes.
To powder almonds, place blanched almonds in a food processor and pulse until they are reduced to a powder.
