Kentucky Chicken Coating Recipe - Cooking Index
1 tablespoon | 15ml | Celery salt |
1 tablespoon | 15ml | Onion salt |
1 tablespoon | 15ml | Poultry seasoning |
1 tablespoon | 15ml | Seasoning salt |
2 tablespoons | 30ml | Baking powder |
1 1/2 teaspoons | 7.5ml | Pepper |
1 1/2 teaspoons | 7.5ml | Paprika |
1 1/2 teaspoons | 7.5ml | Ginger |
1/2 teaspoon | 2.5ml | Thyme |
2 teaspoons | 10ml | Sweet basil |
1 teaspoon | 5ml | Oregano |
1 tablespoon | 15ml | Garlic salt |
2 tablespoons | 30ml | Dry mustard |
For every 2/3 cup of flour add 3 Tbsp. of spice mixture. Dip par-boiled chicken pieces (cooled) in flour mixture, then in egg and milk mixture, then shake in bag with flour mixture again. Deep fry until golden.
(This recipe originally called for one to do the milk and egg thing, then deep fry until golden -then oven cook at 400F for 30 min.)
