Recipe Ingredients

1 tablespoon 15mlEggplant - peeled * (medium)
1/4 cup 59mlTahini
1 tablespoon 15mlLemon juice
1   Garlic clove
1/4 teaspoon 1.3mlBlack pepper
1 pinch  Ground cumin
2 tablespoons 30mlSesame seeds
2 tablespoons 30mlFinely chopped fresh parsley

Recipe Instructions

Place cooked eggplant in food processor. Add tahini (sesame paste),lemon juice, and garlic. Puree. Stir in remaining ingredients; spoon into serving bowl. Garnish with parsley sprig. Serve warm or chill.


HINTS: - smaller eggplants have thinner peels and a sweeter flavor. Select those with firm skin free of soft spots. Store sesame seeds in cool, dark place in refrigerator.
